Making Whoopie... Pies

We're in the heart of Amish country this month and one of the specialties we can count on when we visit Aunt Dorothy and Karen is that they will have Amish made fresh Whoopie Pies for us. These things are heavenly and melt in your mouth. I also learned a great trick that because the icing is in the middle, Grant has to eat the cake part to get to it instead of licking off the frosting and handing the cupcake back to me (I guess he is his mother's son)...
We were excited to see that Pillsbury had a Funfetti Whoopie Pie kit for the summer, we tried it out and it was good but with their standard icing as the filling it was almost too sweet. (I know, who could believe it)
So without buying a kit I learned you can make your own Whoopie Pies with:

box Devil's Food Cake Mix
3large eggs
3/4cup water
1/2cup Vegetable Oil

then for the filling you can blend cream cheese and canned frosting, make your own buttercream or our favorite:

cup butter or margarine, softened

cups marshmallow creme

cups powdered sugar
1
teaspoon vanilla extract
